With this improver you can make your own ice cream recipe to prepare quality scoop ice cream. Improver Special is rich in milk proteins and has a high milk fat content.
Combine with sugar, dextrose or glucose according to your taste to obtain a scoop of ice cream with a creamy taste and smooth texture. Because this improver is slightly vanillated, your basic mix already obtains a subtle taste that your customers will appreciate.

The Special improver will also provide stabilization of your scoop ice cream. This allows you to store your ice cream longer without ice crystals forming.
